for the cookies:
- 1/2 cup unsalted butter, room temp
- 1/3 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1 large egg, room temp
- 1 1/2 cups all purpose flour
- 2 tbsps granulated sugar
- 1 tsp cinnamon
for the frosting:
- 3 tbsps unsalted butter, room temp
- 3 tbsps cream cheese, room temp
- 1/2 tsp cinnamon butter extract (or sub for vanilla)
- 1 1/4 cups powdered sugar
directions!
for the cookies:
- preheat oven to 350 F, and line a baking tray with parchment paper. set aside.
- in a medium bowl, beat together the butter, brown sugar, vanilla, salt and baking powder until well combined.
- add the egg and mix to combine. scrape the sides of the bowl to make sure everything is incorporated.
- stir in the flour until combined.
- in a small bowl, combine the granulated sugar and cinnamon.
- scoop the dough using a cookie scoop, roll the cookies into a ball, then coat them in the cinnamon sugar mixture.
- place the cookies about 2 inches apart on the prepared pan. slightly flatten the dough.
- bake the cookies for 10-12 minutes, or until it's just starting to brown around the edges.
- cool for a few minutes on the tray then transfer to a wire rack.
to make the frosting:
- in a small bowl, beat the unsalted butter and cream cheese until light and creamy.
- add in the extract and powdered sugar. beat until creamy.
- pipe or spread frosting on top of the cooled cookies.
